Chocolate chip Banana Muffins

INGREDIENTS

3 medium bananas, ripe

1 teaspoon sugar free vanilla powder

1/4 cup almond butter

2 eggs

1/2 cup coconut flour

1 tsp baking powder

1 teaspoon cinnamon

20g nuts of your choice

50g dark (paleo) chocolate chips

Preheat oven to 180°.

Mix mashed bananas with the almond butter. Add vanilla and cinnamon.

Add in eggs and mix until combined. Finally, add in coconut flour and baking powder. Gently fold in chocolate chips and nuts.

Pour batter into muffin moulds and bake for 20 minutes or until cooked (test with a knife).

Let the muffins cool down at least 15 minutes before enjoying!
