Coconut chocolate mousse

20 cl full fat coconut milk can
20g unsweetened cacao powder
30g agave syrup
2 egg whites
Place the coconut milk in the fridge for at least one hour (a whole day would be optimal).
Open the can without shaking it. Using a spoon, collect the creamy part of the coconut milk leaving the water at the bottom of the can (you can keep it for a smoothie!). Whisk the cream until it gets thicker. Mix with the cocoa powder and syrup.
In a separate bowl, beat the egg whites until they are stiff.
Mix slowly the egg whites with the chocolate coconut cream.
Pour into two ramekins and place in the fridge for at least an hour.
