Sliced apple fondant

Gluten free - Paleo

5 apples

2 eggs

30g agave or coconut syrup

40g rice flour

1 Tbsp of baking soda

10 cl of milk of your choice (I use Sugar-free Hazelnut milk)

20g almond butter or organic melted butter if you prefer

1 teaspoon vanilla extract

1 teaspoon cinnamon

Preheat oven to 180°.

In a bowl, beat the eggs with the syrup. Add the almond puree, flour, baking powder and milk.

Mix well.

Peel the apples and slice them into very thin strips (ideally with a kitchen robot or a mandolin).

Pour the apples in the bowl (it's normal to have a lot of apples compared to the amount of dough !)

Gently mix.

Pour into a mold (I use a long and narrow cake mould).

Put in a hot oven for 45 min at 180°.

Enjoy warm or cold!
