Zucchini patties

2 small zucchinis

1 small carrot

1 egg

50g rice flour

30ml coconut milk

1 onion

1 Tbsp baking soda

Dried basil

Dried garlic

A pinch of cayenne

Salt pepper

Olive oil

Rinse the zucchinis and carrot and grate it.

Put to drain in a strainer (crush with the back of the spoon to remove all the water).

Place chopped onion in a warm skillet with a bit of water. Grill few minutes then add coconut milk. Let simmer for few minutes.

Mix the egg with spices and flour. Add the onion coconut sauce, then the grated veggies.

If you find that the dough is too liquid add a bit of flour.

Heat olive oil in a skillet. Cook the patties until golden on both sides and place on absorbent paper.

Serve warm!
